Beluga lentil tacos with fresh mango salsa
Singer, songwriter and actress Paloma Faith shares her best vegan recipe with us.
The beluga lentil gets its name from beluga caviar, the world’s most expensive kind of caviar which is harvested from the critically endangered beluga sturgeon. The lentils however are better for your wallet, our friends in the sea, and are probably tastier. A true win-win situation!
serves four.
Beluga Lentils:
1 1/4 cup of dried beluga lentils
1 yellow onion, chopped
2 cloves of garlic, pressed
1 tbsp cumin
1 tbsp chili powder
1 tbsp paprika powder
½ tbsp dried oregano
salt
black pepper
1 can of crushed tomatoes
¾ cup of water
oil for frying
Mango Salsa
3 ripe mangoes, diced
1 medium sized red bell pepper, chopped
1 red onion, chopped
¼ cup fresh cilantro, chopped
1 jalapeno, seeded and finely chopped
Juice of one large lime
Salt
Beluga Lentils
- Boil your lentils in water for 20 minutes.
- While lentils are boiling, heat oil in a cast iron pot. Add pressed garlic and chopped yellow onion to the pot. Once the onion turns soft, add spices.
- Add crushed tomatoes and water into the pot and let simmer until the lentils are done.
- Strain lentils and add to pot when they are cooked and served.
Mango salsa
Add prepared ingredients into a serving bowl and add the lime juice.
Stir with a large spoon and salt to taste. Stir again and let rest for 10 minutes.
Serve with corn tortillas!
